¿Qué es una intolerancia alimentaria?

La intolerancia alimentaria se puede definir como una condición en la que se producen efectos adversos tras ingerir un alimento en concreto o un ingrediente. En muchas ocasiones, una intolerancia alimentaria se debe a una alergia alimentaria donde se produce una reacción de hipersensibilidad como respuesta a un alimento determinado.

Aumento de la permeabilidad intestinal

Este proceso tiene lugar en gran parte de los trastornos digestivos como en las intolerancias y se ha observado que dicha alteración contribuye al desarrollo de enfermedades autoinmunes y enfermedades alérgicas. De forma natural, el intestino es permeable y permite el paso al torrente sanguíneo de sustancias. Sin embargo, daños en la membrana de la mucosa intestinal pueden provocar el traspaso de grandes moléculas al torrente sanguíneo. Estas pueden ser reconocidas por el sistema inmunitario como organismos extraños y producir reacciones alérgicas, inflamación, toxicidad, etc.
