Homemade oat bars make a great mid-morning or afternoon snack – a tasty alternative to shop-bought pastries. This recipe was inspired by London blogger Charlotte of Charley's Health, who suggested adding mushrooms to a sweet recipe: surprising, but delicious.
Ingredients
- 1½ cups oat flakes
- ⅓ cup unsalted nuts (walnuts, hazelnuts or almonds)
- 2 tablespoons honey
- 1 tablespoon coconut oil
- ½ teaspoon ground cinnamon
- A handful of dried berries (optional)
- A pinch of salt
Method
- Preheat the oven to 180 °C and line a tray with baking paper.
- Melt the coconut oil and honey in a saucepan until smooth.
- Mix the remaining ingredients in a large bowl, pour over the honey mixture and stir well.
- Press the mixture onto the tray and bake for about 16 minutes, keeping an eye on it so it doesn't burn.
- Leave to cool, then cut into bars. Enjoy!
